triple cherry-berry crumble

We were able to do a lot of fruit picking this year - blueberries and cherries in the Okanagan, and strawberries here in Alberta. We had so many left over that I froze a bunch of them, in the hopes I could do some baking! I decided on my favourite quick dessert and adapted my mom’s “recipe” for apple crisp (it calls for “a whole bunch of apples” so I’m pretty sure I just wrote it down from her memory!) It’s super simple, with only a few ingredients and even fewer steps, which is always a plus for me!

triple cherry-berry crumble

ingredients

Filling

  • 2 cups cherries (pits removed and diced)

  • 2 cups blueberries

  • 2 cups strawberries (diced

Topping

  • 1 cup quick oats

  • 1 cup flour

  • 1 cup brown sugar (lightly packed)

  • 1 cup butter (softened)

  • 1/4 tsp salt

  • 1 tsps cinnamon (optional)

Instructions

  1. preheat oven to 350F and lightly grease baking dish.

  2. Mix the diced cherries and berries together in a large bowl and pour into baking dish of choice. I used 6 small ramekins for individual servings, but a large 9x13 baking dish would work too!

  3. in a large bowl combine the topping ingredients so they are well mixed but still crumbly.

  4. top the fruit mixture evenly with topping

  5. bake for 45mins for large baking dish, or around 35mins for small ramekins. topping should be golden brown. serve warm with a scoop (or 3!) of vanilla ice cream.
